Delicious dinner rolls

 The other day I made dinner rolls to go along with my thanksgiving themed dinner. These were super easy and quick to make. These ended up coming out very tasty. I recommend this and i will definitely be making these again.

Ingredients:

~Butter(to grease the pan and for brushing the rolls)

~3/4 cup milk

~4 tbsp. butter

~3/4 cup hot water(105-110 degrees)

~4 tbsp. sugar

~1 tsp. salt

~4 1/2 cups of flour

~Non-stick cooking spray

~1 tbsp. active dry yeast


Instructions:

~Preheat the oven to 170 degrees F or until warm.

~Grease the baking dish you are using with some butter and set aside.

~In a microwave safe bowl, add the milk(3/4 cup) and the butter(4 tbsp.)and microwave for about 1 1/2 minutes.Don't let milk boil.

~Now add the hot butter/milk mixture along with the hot water to the bowl of a kitchen aid mixer.

~Add the sugar(4 tbsp.),salt(1 tsp.), and 2 cups of the flour to the bowl and mix for 1 minute using the dough hook.

~Add the yeast along with 1 cup of the flour to the bowl. mix until combined.

~Add the remaining flour(1 1/2 cups)to the dough. Then mix for 5 minutes.

~Remove the dough hook and remove the bowl from the mixer.Than cover the bowl with plastic wrap and let sit for 5 minutes.

~Spray your area with non-stick spray and divide the dough into equal pieces and roll into balls.

~Place the dough into your pan.

~Place the pan into the preheated 170 degree oven. Let them rise in the oven for about 20 minutes until the tops of the rolls are even with the sides of the dish.

~Turn the oven up to 350 degrees F while allowing rolls to stay in the oven. Bake for 15 minutes or until golden brown. The rolls cook while the oven preheats to 350 and finishes in the 15. No need to preheat and then cook 15 minutes.

~Lastly brush the rolls with some butter and serve. Usually makes about 12 rolls depending on size.

Peach Pork

Me and my mom made this yummy peach pork. This recipe came out really good. On a scale from 1-5(1 being the easiest and 5 being the hardest)this would fall under a 1. This recipe required no work. I definitely recommend this recipe.

Ingredients:
~6 boneless pork loin chops(about 1.5 pounds)
~6 tbs butter
~3/4 cup of peach preserves(no sugar added)
~1/2 tsp thyme
~1/2 tsp salt

Instructions:
~In a skillet over medium high heat melt the butter and whisk occasionally until it starts to bubble and foam.
~Continue whisking until it just starts to develop little brown specs and then add the seasonings then remove from heat.
~Continue to whisk and let it cool for 1-2 minutes.
~Whisk in preserves until smooth(may be a little chunky with fruit from preserves)
~Place chops in slow cooker and pour sauce over them.
~Cover and cook on low for 6-7 hours or high for 3-4.

Apple pie!!

So today I made a pie. This was really simple to make and came out delicious. On a scale from 1-5(1 being the easiest and 5 being the hardest)this would fall under a 1. This requires minimal work and effort. I totally recommend this pie for a party.

Ingredients:
~2 disks of grandma's Pie dough
~2 1/2 pounds of mixed apples
~2 tbsp of all-purpose flour
~3/4 cup of sugar
~1 tbsp sugar
~1 tsp of ground cinnamon
~1/4 tsp. ground nutmeg
~1/2 tsp of salt
~1 tbsp of lemon juice

Instructions:
~Heat the oven to 375°F.
~Roll out one of the disks of dough on a lightly floured surface to 1/8-inch thickness; transfer to a 9-inch pie pan. Set aside and keep chilled. 
~Toss the chopped apples, flour, 3/4 cup sugar, cinnamon, nutmeg, salt, and lemon juice together and mix until combined. Pour apple mixture into the prepared pie pan.
~Roll the remaining dough to 1/8-inch thickness and top the pie with the dough.
~Trim, leaving 1/2-inch overhang, fold under, and crimp edges. Sprinkle the top with the remaining tablespoon of sugar; chill for 10 minutes.
~Bake until fruit is bubbling and crust is golden brown -- 50 to 55 minutes. Cool on wire rack.

Delicious bang bang chicken!!

Hi! So last night I made this recipe and it was AMAZING!! This is by far the best food I have made. On a scale from 1-5(1 being the easiest and 5 being the hardest) this would fall under a 4. The only downside to this recipe was it was pretty messy. But it was totally worth it. I definitely recommend making this recipe.(I doubled the sauce you don't have to though)

Ingredients:
~1/2 cup vegetable oil, or more, as needed
~1 cup buttermilk
~3/4 cup all-purpose flour
~1/2 cup cornstarch 
~1 large egg
~1 tablespoon hot sauce
~Kosher salt and freshly ground black pepper, to taste
~1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
~1 cup Panko

For the sauce:
~1/4 cup mayonnaise
~2 tablespoons sweet chili sauce
~1 tablespoon honey
~2 teaspoons Frank’s Hot Sauce

Instructions:
~For the sauce mix the mayonnaise(1/4 cup),sweet chili sauce(2 tbs),honey(1 tbs),and Frank's hot sauce(2 tsp)in a small bowl and set aside.
~In a large bowl mix together the buttermilk(1 cup),flour(3/4 cup),cornstarch(1/2 cup),egg(1 egg),hot sauce(1 tbs),and the salt and pepper.
~Working one at a time, dip chicken into buttermilk mixture, then dredge in Panko, pressing to coat. 
~Heat vegetable oil in a large skillet over medium high heat.
~Working in batches, add chicken to the skillet and cook until evenly golden and crispy, about 2-3 minutes. Transfer to a paper towel-lined plate.
~Serve immediately and drizzle the sauce over the chicken.

Easy homemade ice cream!

Hi! The other day I made ice cream. This recipe is super simple and straightforward. On a scale from 1-5(1 being the easiest and 5 being the hardest)this would be a 1. This recipe required minimal effort. I added Oreo's to my ice cream and it came out really good. I recommend making this.

Ingredients:
~2 cups(16 oz/450 ml)cold whipping cream,all purpose cream,heavy cream. 
~14 ounces(1 can/400 ml)cold sweetened condensed milk(fat-free or regular).
~1 tsp of vanilla extract(optional)

Instructions:
~Put the sweetened condensed milk in the fridge.
~Beat cold heavy cream(16 oz)on medium using a mixer fitted with the whisk attachment until peaks form.
~Lower the speed and pour the condensed milk(14 ounces)into the whipping cream.
~Add the vanilla extract(1 tsp) if you are adding it.
~Turn the speed up until the mixture becomes thick and more peaks start to form.
~Now add any desired flavors or toppings into your ice cream.
~Put the ice cream in a large container and freeze it for 6 hours of overnight.(lasts 2 weeks)

Delicious cookies

Hi!! So yesterday I made these yummy cookies. I doubled this recipe so it made about 24 cookies. These are the best I have ever made. On a scale from 1-5(1 being the easiest and 5 being the hardest)these would fall under a 2. They were pretty simple to make. These cookies had the prefect amount of saltiness and sweetness to them.I definitely recommend these.

Ingredients(12 cookies)(double if needed):

~1/2 cup granulated sugar
~3/4 cup brown sugar, packed
~1 teaspoon salt
~1/2 cup unsalted butter, melted
~1 egg
~1 teaspoon vanilla extract
~1 1/4 cups all-purpose flour
~1/2 teaspoon baking soda
~4 oz milk or semi-sweet chocolate chunks
~4 oz dark chocolate chunk, or your preference


Instructions:
~In a large bowl mix the brown sugar(3/4 cup),granulated sugar(1/2 cup),salt(1 tsp), and butter(1/2 cup) until there are no lumps.
~Whisk in the egg(1 egg) and vanilla(1 tsp.
~Sift in the flour(1 1/4 cups)and baking soda(1/2 tsp),then fold the mixture with a spatula (Be careful not to over mix)
~Mix in the chocolate chunks and then chill the dough for 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
~Preheat the oven to 350°F(180°C)and line a baking sheet with parchment paper.
~Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches(10 cm)of space between cookies and 2 inches(5 cm)of space from the edges of the pan so that the cookies can spread evenly.
~Then bake for 12-15 minutes or until lightly browned.

Berry Icebox cake

So today I made berry icebox cake. It was a little messy but this was REALLY good! On a scale from 1-5(1 being the easiest and 5 being the hardest) this would be a 2. This recipe doesn't require a lot of effort. This would be perfect to make on a nice summer day. I definitely recommend this recipe.

Ingredients:
~19 oz graham crackers
~8 oz cream cheese(softened)
~2(34 oz)packages of vanilla instant pudding
~2 1/2 cups cold milk
~12 oz cool whip(or homemade whipped cream)
~3 cups of fresh sliced strawberries.
~1 1/2 cups fresh blueberries
~2 oz white chocolate chips

Instructions:
~Beat cream cheese(8 oz) and dry pudding(2 packages)in a large bowl and mix until blended.
~Then gradually beat in milk.
~Stir in the cool whip(12 oz)or homemade whipped cream and and leave out 1/2 cup.
~Spread a thin layer of the reserved cool whip in a 9x13 pan to just coat the bottom.
~Layer the graham crackers across the pan covering all empty space.
~Now spread a layer of the pudding mixture over the graham crackers and add the sliced strawberries and blueberries on top of the layer. 
~Place the graham crackers on top of the berries, then pudding mixture, then add the berries on top again.
~Repeat that process one more time(3 times total)and you should reach the top of your pan.
~Refrigerate for at least 4 hours or overnight until the graham crackers have softened completely.
~When ready to serve, melt the white chocolate chips in a bowl and drizzle over dessert.
~You can use a spoon to drizzle it or use a Ziploc bag and snip the corner and it makes for an easy piping bag.

Enchiladas

Hi! So for today's dinner I made enchiladas. These were pretty good. The only thing I recommend is making the sauce after making the filling because the sauce started to harden. On a scale from 1-5(1 being the easiest and 5 being the hardest)this would fall under a 4. The hardest part for me was making the sauce. But overall they tasted good and I recommend.

Ingredients:

Spice mix
~1 tsp each onion & garlic powder 
~1 tbsp each cumin powder, paprika and dried oregano
~1/2 - 1 tsp cayenne pepper (optional)

Enchilada sauce:
~2 tbsp olive oil
~3 tbsp flour(all purpose)
~2 cups chicken stock/broth(low sodium)
~1 1/2(375 ml) tomato passata or 1 can(8 oz)of canned tomato sauce.
~1/4 tsp each salt and pepper

Beef:
~1 tbsp olive oil
~2 garlic cloves(minced)
~1 onion(finely chopped)
~1 lb(500g) ground beef
~400g/14 oz refried beans(1 can)
~400g/14 oz black beans(Drained)

Enchiladas:
~8 tortillas
~1.5 cups of grated melting cheese, or more.
~Cilantro/coriander leaves(chopped)

Instructions:
~Mix together the spice mix and set aside.

Enchilada sauce:
~Heat oil in a large saucepan over medium heat. Add flour and mix to combine into a paste. Cook for 1 minute, stirring constantly.
~Add 1/2 cup chicken broth, whisk straight away then it will turn into a thick smooth paste quite quickly.
~Add remaining chicken broth,passata,salt,pepper and 2 tablespoons of SPICE MIX. Whisk.
~Increase heat slightly to medium high. Cook for 3 to 5 minutes, whisking regularly, until the sauce thickens to the consistency of thick syrup. Remove from stove.

Filling:
~Preheat oven to 350 degrees Fahrenheit(180 degrees C)
~Heat oil in a skillet over high heat. Add garlic and onion, cook for 2 minutes.
~Add beef and cook for 2 minutes, breaking it up as you go. Add remaining Spice Mix. Cook for a further 2 minutes or until completely brown.
~Add the refried beans, black beans, about 1/4 cup of Enchilada Sauce + salt and pepper. Mix and cook for 2 minutes then remove from stove.

Enchiladas:
~Smear a bit of Sauce on the bottom of a baking dish
~Place filling on the lower third of a tortilla. Roll up then place in the baking dish, seam side down. Repeat with remaining Filling & Tortillas.
~Pour Sauce over the Enchiladas, top with cheese, bake for 10 minutes covered then 10 minutes uncovered. Serve hot!

Banana Bread!!

So today I made this delicious banana bread. This recipe was amazing and it was super easy to make. On a scale from 1-5(1 being the easiest and 5 being the hardest) this was a 1. Making this was not hard at all and I will definitely be making it again.I totally recommend this recipe.

Ingredients:
~1/2 cup softened butter 
~1 cup granulated sugar
~2 eggs beaten
~3 or 4 bananas crushed(I used 4)
~1 1/2 cups all purpose flour
~1 tsp baking soda
~1/2 tsp salt
~1/2 tsp vanilla extract(optional)
~I added a little bit of cinnamon to mine as well.

Instructions:
~Preheat oven to 350 degrees Fahrenheit(180 degrees Celsius)
~Mix the sugar(1 cup)and butter(1/2 cup)together.
~Add eggs(2 eggs)and the crushed bananas(3 or 4)to the mixture and combine well.
~Sift in flour(1 1/2 cups),baking soda(1 tsp), and salt(1/2 tsp).Add to creamed mixture.Add vanilla(1/2 tsp)
~Mix until combined.Do not over mix.
~Then pour into a greased and floured loaf pan.
~Finally, bake for 55 minutes.
~Keeps well, refrigerated.

Easy Meatloaf

Hi! The food I have made today is meatloaf. This came out really good. On a scale from 1-5(1 being the easiest and 5 being the hardest) this would fall under a 0. That's how easy it was. This recipe required no effort at all and was really quick to make. In conclusion this recipe was good,easy,and quick. I recommend.

Ingredients:
~1 envelope Lipton Recipe Secrets Onion Soup Mix
~2 pounds ground beef or ground turkey
~3/4 cup plain dry bread crumbs
~2 eggs
~3/4 cup water
~1/3 cup ketchup

Instructions:
~Preheat your oven to 350 degrees.
~Then in a large bowl mix all of the ingredients together.
~In 13x9-inch baking or roasting pan, shape into a loaf. And coat with non-stick spray.
~Then bake for 1 hour or until cooked through.
~Let cool for 10 minutes and serve.

The Best Fudge Brownies

These were the best brownies I have had in a while. They were super soft and gooey on the inside. On a scale from 1-5 (1 being the easiest and 5 being the hardest) they were a 2. These brownies were super quick and easy to make. The 30 minutes it takes to make these are totally worth it. I recommend this recipe and I will definitely be making them again.

Ingredients:
~1/2 cup unsalted butter, melted 
~1 tablespoon cooking oil, (olive oil or coconut oil can be used)
~1 1/8 cup fine sugar, (caster sugar or white granulated sugar)
~2 large eggs
~2 teaspoons pure vanilla extract
~1/2 cup all purpose (or plain) flour
~1/2 cup unsweetened cocoa powder
~1/4 teaspoon salt
~Chocolate chips(optional)


Instructions:
~Preheat your oven to 350 degrees Fahrenheit(175 degrees C)
~Grease a 8-inch square baking pan and spray with cooking spray.
~Mix in the melted butter(1/2 cup), oil(1 tbs), and sugar(1 1/8 cups) in a mixing bowl for a minute. Then add the eggs(2 eggs) and the vanilla(2 tsp).
~Sift in the flour(1/2 cup), cocoa powder(1/2 cup), and salt(1/4 tsp).Do not over mix.
~Pour the batter into the pan and smooth it out. 
~Bake for 20-25(I put it in the oven for about 28 minutes)and test with a tooth pick.
~Now let them cool and enjoy.

Thai Sesame Patties

Hello, today I made Thai sesame patties. These were really good. They had the perfect amount of spice and they were delicious. On a scale from 1-5(1 being the easiest and 5 being the hardest) these would fall under a 3. Making them wasn't hard it was more the frying part. Be careful they don't burn. But if you aren't a big fan of onions I recommend less onions and less parsley. But overall this recipe was good and I would make it again.

Ingredients:
  • ~5 green onions, chopped(I used 3 cups)
  • ~1 cup parsley, finely chopped
  • ~5 cloves garlic, diced
  • ~2 tsp fresh ginger, finely diced
  • ~1/4 tsp garlic powder
  • ~1/2 tsp salt
  • ~1/4 tsp ground pepper
  • ~1/2 tsp red pepper flakes (or more to taste)
  • ~1.5 lb lean ground turkey
  • ~2 tbsp toasted sesame seeds
  • ~1.5 tbsp soy sauce
  • ~1 egg
  • ~1/2 tbsp sesame oil
  • ~1 tbsp canola oil

Toppings:
~ More soy sauce(optional)
~ Thai sweet chili sauce(optional)

Instructions:
1)Combine all the ingredients except for the oils in a bowl and mix completely.
2)Roll them into balls and flatten them slightly. Repeat until mixture is gone.
3)Then refrigerate for at least an hour.
4)Put the oils onto the pan and then add the patties(turn the patties often)and wait until golden brown. 
5)If you want you can add some soy sauce to the patties or some Thai sweet chili sauce.

Banana pancakes


Hi!! Today I made these yummy banana pancakes. These tasted really good. These pancakes weren't that hard to make either. On a scale from 1-5 (1 being the easiest and 5 being the hardest) these would fall under a 2. This took little effort and was very good. It made 5 medium sized pancakes for me. It took a little over an hour for the whole process. I recommend and would definitely make them again.

Ingredients:
  • ~1-1/2 cups all purpose flour, spooned into measuring cup and leveled off
  • ~2 tablespoons sugar
  • ~2-1/2 teaspoons baking powder
  • ~1/2 teaspoon salt
  • ~1 small, over-ripe banana, peeled (the browner, the better)
  • ~2 large eggs
  • ~1 cup plus 2 tablespoons low fat milk
  • ~1/2 teaspoon vanilla extract
  • ~3 tablespoons unsalted butter, melted
  • ~ a pinch of cinnamon(optional)

  • For cooking
~Vegetable oil
~Unsalted Butter

For toppings(Optional)
  • ~Maple syrup
  • ~Sliced bananas
  • ~Confectioners' sugar 


 Instructions:
1)In a bowl mix the flour(1 1/2 cups),sugar(2 tbs),salt(1/2 tsp),and baking powder(2 1/2 tsp).
2)In a separate bowl mash the banana. Add in the 2 large eggs,milk(1 cup and 2 tablespoons),and vanilla(1/2 tsp)and mix until smooth. 
3)Now that everything is blended add the banana mixture and the melted butter(3 tbs) to the flour mixture. Do not over mix. The batter will be lumpy.
4)I added some cinnamon into my batter to give it some more flavor.
5)Set a pan over medium heat. Put the butter and 1 tbs of vegetable oil onto the pan. Then cook the pancakes until holes appear at the top. When the holes appear flip the pancake.
6)Then repeat the process with the remaining batter.
