Banana pancakes


Hi!! Today I made these yummy banana pancakes. These tasted really good. These pancakes weren't that hard to make either. On a scale from 1-5 (1 being the easiest and 5 being the hardest) these would fall under a 2. This took little effort and was very good. It made 5 medium sized pancakes for me. It took a little over an hour for the whole process. I recommend and would definitely make them again.

Ingredients:
  • ~1-1/2 cups all purpose flour, spooned into measuring cup and leveled off
  • ~2 tablespoons sugar
  • ~2-1/2 teaspoons baking powder
  • ~1/2 teaspoon salt
  • ~1 small, over-ripe banana, peeled (the browner, the better)
  • ~2 large eggs
  • ~1 cup plus 2 tablespoons low fat milk
  • ~1/2 teaspoon vanilla extract
  • ~3 tablespoons unsalted butter, melted
  • ~ a pinch of cinnamon(optional)

  • For cooking
~Vegetable oil
~Unsalted Butter

For toppings(Optional)
  • ~Maple syrup
  • ~Sliced bananas
  • ~Confectioners' sugar 


 Instructions:
1)In a bowl mix the flour(1 1/2 cups),sugar(2 tbs),salt(1/2 tsp),and baking powder(2 1/2 tsp).
2)In a separate bowl mash the banana. Add in the 2 large eggs,milk(1 cup and 2 tablespoons),and vanilla(1/2 tsp)and mix until smooth. 
3)Now that everything is blended add the banana mixture and the melted butter(3 tbs) to the flour mixture. Do not over mix. The batter will be lumpy.
4)I added some cinnamon into my batter to give it some more flavor.
5)Set a pan over medium heat. Put the butter and 1 tbs of vegetable oil onto the pan. Then cook the pancakes until holes appear at the top. When the holes appear flip the pancake.
6)Then repeat the process with the remaining batter.
